Extraction, biological activities and stability of Hylocereus polyrhizus peel extract as a functional food colorant and nutraceutical

Purpose: To study the biological effects and stability of H.polyrhizus peel extract as a natural colorant nutraceutical in foods
 Methods: Distilled water, 90 % alcohol mixed with citric acid (2 4 %) were used for pigment extraction. Betalain content 2, 2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity determined. Cytotoxic effect against human breast adenocarcinoma (MCF-7), cervical (Hela), colon (HT-29), murine leukemia (P388) oral cavity carcinoma (KB) measured MTT assay. Then, effectiveness different carriers coating i.e., lactose, starch maltodextrin measured. The thermal pH stabilities pigments determined samples at temperatures 50, 70 90°C, values 7 12. Finally, consumer acceptance cooled jelly containing synthetic dye betalain was assessed.
 Results: water best solvent extraction, producing 59.9 mg/g betalain, 42.39 DPPH activity. had high antiproliferative P388 cancer, 77.50 %, cytotoxicity. 10 lactose matodextrin (p > 0.05). unstable when adjusted 2 12 all temperatures. Cooled 1 artificial highest sensory score, followed by 2.5 colorant.
 Conclusion: H. polyrhizus has promising potential application food products functional nutraceutical. However, further studies are required shelf life pigment.
